The Husband has recently recommitted himself to eating better. Along with his newfound excitement for eating well has come a certain flair for making simple, yet super healthy meals. Thank the Maker! As a wife who’s used to being the sole cook for every. single. meal. The Husband’s budding culinary expertise is a welcomed thing.

He has been charting his food consumption via macronutrients (“macros”) rather than calories. Macronutrients are the fats, carbohydrates, and proteins that the body needs in large amounts. His signature meal, the Macro Bowl, is one of my all-time favorite meals. The fact that it is perfect for breakfast, lunch, or dinner makes it even better.

On our food journey, we’ve learned to value quality ingredients in our food. Forthis recipe that means looking for uncured bacon and eggs from true free rangehens.

I first foundthe happy egg co.about a year ago. After reading the inside of the box I was intrigued. I already knew that terms “cage free” and “free range” that many companies use can be very confusing to consumers. What I did not know, however, was that I could purchase eggs from true free range hens right in my grocery store!

the happy egg co. delicious, brown-shelled eggs are produced by free to roam hens raised on family run free rangefarms. Of course, they never use hormones. For this brand, raising their hens humanely isn’t simply a marketing tactic or a misleading mantra. In fact, The Happy Egg Co. is the first commercial free range egg producer in the U.S. to certified by the American Humane Association ™.

For those who’ve never eateneggs from free rangeon pasture hens, lemme ‘splain why, once we began eating the happy egg co. eggs, we’ve never gone back.The shells are firmer and don’t crumble all over the place when you crack them. The yolks arebright orange and firm, instead ofpale yellow and so weak that they break if you so much as look at them sideways. You can eventastea difference!

We went through a period of time when our local store stopped carrying the happy egg co.(boo!). I was so disappointed! Other eggs just don’t taste great to me. Irefuse to eat eggs that taste “blah”. Thankfully, we found another store that carries them, so the happy egg co. is once again a refrigerator staple!

Macro Bowl Recipe

The Macro Bowl is seriously simple to whip up. Like I alluded to earlier, The Husband is a novice in the kitchen, but you can’t even tell it when he makes the Macro Bowl.

It is important to begin with the freshest ingredients possible!

Ingredients

  • 3 Tbsp Avocado oil, divided
  • 2 Cups Mushrooms, diced
  • 2 1/2 Cups Broccoli, chopped
  • 2 Cups Sweet potato, diced
  • 1 1/2 Cup Cauliflower, diced
  • 1/2 tsp Onion powder
  • 4 Eggs
  • 3 tbsp water
  • 6-8 oz Uncured bacon (approx 6-8 strips)

Instructions

    First, the Veggies

  • Heat large frying pan with 2 Tbsp avocado oil on medium high. Add the mushrooms, broccoli, sweet potato, cauliflower, and onion powder.
  • Cover and cook for 4 minutes.
  • Remove the lid and stir.
  • Cover again and cook for 3 minutes.
  • Remove from heat.
  • While the veggies are cooking, prep and cook your scrambled eggs.

  • Crack the eggs into a bowl, add up to 3 tbsp water, and whisk with a fork or small whisk.
  • Heat small frying pan on medium heat with 1 tbsp avocado oil and add eggs.
  • As the eggs begin to set, gently pull the eggs across the pan with an upside-down spatula.
  • Bacon

  • Preheat oven to 400° F.
  • Place bacon strips on foil lined baking sheet and bake for 15 minutes or until crispy.
  • When done, immediately remove from pan and place on a plate lined with a paper towel.
  • Combine

  • Now the fun part! Combine the veggies, eggs, and bacon (crumble the bacon over top of the veggies and eggs).

Notes

This makes 2 very large servings. My husband always finishes his, but I can never finish mine. If you've never oven cooked your bacon, just do it. You'll never go back to pan frying.I love to drizzle a little bit of sriracha sauce over top.
