Sweet Potato Casserole Recipe: Ingredients & Substitutions

I recommend making this Thanksgiving sweet potato casserole as written, however here are some possible substitutions.

Best Sweet Potato Casserole Recipe (4)
  • Salted Butter.Unsalted butter can be used in place of salted butter, you may just need to increase the salt.
  • Eggs.I do not recommend making a substitution for the egg.
  • Whole Milk.Half and half, heavy cream, or 2% milk can be used in place of whole milk. Fat content is important to the final outcome of this recipe.
  • Brown Sugar. light or dark brown sugar can be used with great results.
  • All-purpose flour.For a gluten-free version, use an all-purpose gluten-free flour.

How to Make Sweet Potato Casserole

This sweet potato casserole is easy to make, but as always we’ll walk through the process step-by-step, and don’t forget to watch the video.

Roast the Sweet Potatoes

To easily roast sweet potatoes, wash and pierce them with a fork. Then, individually wrap the potatoes in foil and put them on a baking sheet. You can roast them directly on an oven rack, just be sure the foil is completely closed so there’s no dripping.

Bake until the sweet potatoes are tender and compress when touched. The baking time depends the potatoes’ thickness. Check at 40 minutes if they are small.

Open foil and set the sweet potatoes aside to cool.

Make the Pecan Crumb Topping

While the sweet potatoes are roasting, make the crumb topping. In a medium bowl, use a fork or pastry cutter to combine butter, brown sugar, flour sea salt and cinnamon until a coarse meal forms.

Best Sweet Potato Casserole Recipe (7)

Add pecans and stir until evenly distributed in the mixture. Set aside.

Rice (or Mash) Cooked Sweet Potatoes

Scoop the slightly-cooled sweet potato flesh out of the skins and transfer to a large bowl. Use a potato ricer to mash the cooked sweet potato flesh – discard any stringy pieces left in the ricer.

Note: you can use a potato masher but I don’t not recommend it, as sometimes the flesh of a sweet potato is stringy, and a ricer will remove any unpleasant texture. Or you can put the sweet potato, along with the other filling ingredients, in the container of a blender and blend until smooth.

Make the Filling

Once the sweet potato is riced/mashed, add eggs, butter, brown sugar, maple syrup, sea salt, cinnamon, ginger and nutmeg and stir to combine.

Assemble the Sweet Potato Casserole

Decrease oven temperature to 350 degrees F and grease an 8×8” baking dish. Pour sweet potato mixture into the prepared pan and smooth out the top so it is flat and even.

Sprinkle the pecan crumb topping evenly over the top of the sweet potato mixture, gently pressing it into the mixture.

Bake in preheated oven until the top is slightly puffed and the topping is lightly browned. Let cool slightly and serve.

FAQs

Why add eggs to sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

How do you keep sweet potato casserole from being runny? ›

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

Is it better to boil sweet potatoes or bake sweet potatoes? ›

Baking can also cause an 80% drop in vitamin A levels, twice as much as boiling. Therefore, from a nutritional standpoint, boiling rather than baking should be recommended for cooking sweet potato.

Why do you soak sweet potatoes before baking? ›

The theory is that soaking draws out starch from inside the potatoes, helping them crisp up. I've tested soaking sweet potato fries many times, and I've found that it doesn't make them much crispier, if at all.

What makes sweet potatoes taste better? ›

Dice the sweet potato, and leave the skins on. Then toss the chunks in a splash of tamari, oil, and maple syrup, and then dust heavily with chili powder, smoked paprika, and garlic powder. Roast at 400 Fahrenheit for about 30-50 minutes, or until the potatoes begin to crisp up.

How to thicken up sweet potato casserole? ›

If you prefer a thicker casserole, add 2-3 tablespoons of flour to the sweet potatoes to help them thicken up as they cook.

What is the liquid coming out of my baked sweet potato? ›

The ooze is actually referred to as "sap." It is made up of sugar and starch combined with the moisture found in the vegetable, and it escapes out of the damage made from the knife. The sap really equals the sweetness. If it's pouring out of your potato, that means it's a sweet and delicious vegetable.

How to tell when sweet potato casserole is done? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

Why is boiling not good for sweet potatoes? ›

While boiling makes sweet potatoes tender, it doesn't help much with their flavor. Most dishes that call for boiled sweet potatoes would be improved if you used roasted or baked sweet potatoes.

Is it better to bake sweet potatoes in foil or not? ›

Wrapping the sweet potatoes in foil ensures that they don't dry out too quickly, and allows you to add aromatics if desired. Unwrapping the sweet potatoes and increasing the oven temperature produces charred, roasted flavors and caramelizes converted sugars.

Do you peel sweet potatoes before boiling them? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Why are my sweet potatoes still hard after baking? ›

The Squeze Test - When you are wondering if your baked sweet potato recipe is done, give the sweet potato a little squeeze (with an oven mitt on!). If your baked sweet potato feels tender, it is likely ready. If it still feels firm, I'd put it back in the oven for another 15 minutes.

What's the difference between a sweet potato and a yam? ›

Yams and sweet potatoes differ in flavor and appearance, and they are not related. Sweet potatoes are in the morning glory family, while yams belong to the lily family. Yams aren't as sweet as sweet potatoes, and they are starchier and drier. Their texture and flavor are more similar to potatoes or yuca.

Why do you soak potatoes in sugar water? ›

The soaking, Mr. Nasr said, is the secret to the crisp texture of the fries. It draws out the starch, making them more rigid and less likely to stick together. The cooks fry them twice, first blanching them until slightly limp in peanut oil heated to 325 degrees, and again in 375-degree oil to crisp and brown them.

Why add egg to casserole? ›

If you add more eggs, it will result in a casserole that is more firm and less likely to deflate.

What is the purpose of adding eggs in baking? ›

What Eggs Do in Baking Recipes. Eggs play an important role in everything from cakes and cookies to meringues and pastry cream — they create structure and stability within a batter, they help thicken and emulsify sauces and custards, they add moisture to cakes and other baked goods, and can even act as glue or glaze.

Does egg thicken casserole? ›

Thicken with Eggs

First you need to drizzle a small amount of the hot liquid onto the egg, whisking vigorously as you pour. Then stir the egg back into the pan and heat gently until it starts to thicken. This is a similar method to the one we use in our Carbonara recipe!

Why do people put an egg in their mashed potatoes? ›

Adding egg yolks to a pot of mashed potatoes is an easy, dairy-free texture and taste upgrade that doesn't require any special techniques. The yolks harbor all the flavorful fats and emulsifying components and will thus effectively unify the fat and water in potatoes, translating to a smoother, uniformly creamy pot.
