Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F
If using filets mignon or NY strip steak, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.
If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.
Roast the Potatoes
Halve potatoes lengthwise.
Place potatoes on prepared baking sheet and toss with 2 tsp. olive oil, potato seasoning, and a pinch of pepper. Spread into a single layer, cut-side down.Roast in hot oven until golden-brown and fork-tender, 18-20 minutes.While potatoes roast, continue recipe.Prepare Ingredients and Make Crema
Zest lemon, halve, and juice.
Drain capers.Trim green beans, if necessary.In a mixing bowl, combine sour cream, lemon zest (to taste), and a pinch of pepper. Set aside.Pat steaks dry and season both sides with 1/4 tsp. salt and a pinch of pepper.Crisp Capers and Make Lemon Caper Butter
Line a plate with a paper towel.
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add capers to hot pan. Stir often until capers are crisp and browned, 3-4 minutes.Remove from burner. Transfer capers to towel-lined plate. Wipe pan clean and reserve.Once cool enough to handle, transfer crisped capers to a clean cutting board and mince.In another mixing bowl, combine softened butter, 1 tsp. lemon juice, and capers (to taste). Set aside.Cook the Steaks
Return pan used to crisp capers to medium heat and add 1 tsp. olive oil.
Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a plate and cover with foil. Rest, 3 minutes.While steaks cook, continue recipe.Cook Green Beans and Finish Dish
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add green beans and minced garlic and lemon basil to hot pan and cook, 1 minute.
Add 1/4 cup water, cover, and cook until tender, 6-8 minutes.Uncover and season with 1/4 tsp. salt and a pinch of pepper. Remove from burner.If green beans need more time, add 2 Tbsp. water, cover, and stir occasionally, 1-3 minutes.Plate dish as pictured on front of card, topping steak with lemon caper butter and garnishing potatoes with crema.
